Heirloom Tomato Pie

Ingredients

  • 1 10 in. regular round pie shell (not deep dish)
  • 1 lb. fresh heirloom tomatoes (3 medium
    tomatoes)
  • 1 oz. chopped Kalamata olives
  • 12 oz. Blue Moon BLUE CHEESE PIMIENTO CHEESE
  • 4 oz. sharp cheddar cheese
  • Sprinkle of fresh chopped basil
  • 2 Tbsp. flour
  • 1.5 Tbsp. Blue Moon YEP! SHAKE ORIGINAL seasoning

Directions

  • Slice your tomatoes. Chop your basil coarsely. Dice your Kalamata olives.
  • Lay your tomatoes out flat and coat heavily with YEP! SHAKE ORIGINAL seasoning and then dust lightly with flour. Flip tomatoes and repeat.
  • Add your tomatoes into the bottom of your pie shell.
  • Add Kalamata olives and sprinkle with chopped basil.
  • Top with Blue Moon’s BLUE PIMIENTO CHEESE.
  • Sprinkle with sharp cheddar cheese.
  • Bake at 300° for approximately 1 hour or until bubbly. Allow to settle after removing from oven.
  • Slice & enjoy!
